Cacciatori is usually prepared by placing a meat (usually chicken or rabbit) into a pan filled with olive oil after lightly dusting it with pepper and salt. After searing each side for approximately four to five minutes, the excess fat of the meat is poured back into the pan and then vegetables are added, along with either a quarter or half a cup of red wine in order to add a bit of dryness to the meal. It is then served with a small side of pasta.

Saltimbocca

Saltimbocca is a simple, dry, salty dish that consists of veal topped with sage and then marinated in oil or wine. This dish is usually topped with capers seasoned with sea salt.
